Rotating Single-Origin February: Honduras

Our Honduras is grown in the region of San Vincente by the farmer Edwin Sabillón. After experiencing extreme leaf rust in 2011, he began growing his crops using the Parainema varietal which was resistant to such conditions. Our share of beans uses a Honey process to bring out its deep yet sweet flavors; the coffee cherry is depulped, fermented, washed, and dried. We roast this Honduras medium-light to bring out its integral flavors of brown sugar, plum, and orange marmalade.
